so we're paleo for a little bit
Yep. It was time for a reset. It's been five days, and I feel pretty close to awesome. So that's good.
We're running a half marathon in just about a month, so we're trying to gear our bodies up for that. And I am glad to say it is working!
On the downside, we're in a bit of a withdrawal... I miss my chocolate. Aaron misses his cheez-its. Guess you can't win it all.
And so. Paleo cookies. Ya know, they're alright. They're not the same by any means but at least it killed my dark chocolate craving.
Here's to health with a little bit of sweet mixed in.
Paleo Chocolate Chip Cookies
(recipe slightly adapted from Paleo Hacks)
1/3 cup coconut flour
2 eggs
1/4 cup coconut oil
1/4 cup natural sweetener (I used part honey, part maple syrup)
1 tsp vanilla
Pinch salt
1/3 cup 85% cocoa dark chocolate bar, cut into chunks
Preheat oven to 350. Line a baking tray with parchment paper. Whisk together everything but the chocolate, until it comes together into a thick batter. Add the chocolate. Scoop out and shape into round, flat circles, and bake for 10-15 minutes. Serve with some almond milk and enjoyyyy your treat.
